Broaden your knowledge and gain new skills with a short course at Carrick Institute of Education.

We conduct a range of courses from hospitality to training and assessment. All courses are taught by professional and experienced staff.

Please note: The short courses indicated here are not accredited as full-time courses and are not a part of Carrick’s full-time vocational programs. Course delivery lengths and start dates may vary.

Provide Responsible Service of Alcohol - THHBFB09B

This course provides the skills and knowledge needed to satisfy the requirements for service of alcohol under state and or territory legislation. A Responsible Service of Alcohol, Liquor Licensing Victoria Certificate is issued upon successful completion.

Cupcakes and Cookie Making

This fun, ‘hands on’ course covers a variety of traditional cupcake making including vanilla cupcakes with butter cream icing, chocolate raspberry cupcakes with ganache topping, as well as famous cookies such as chocolate chip, butterscotch pecan and much more.

Gluten Free

This course covers a variety of gluten free baking from bread, to muffins as well as a cake. It is a ‘hands on’ course where each student makes all the recipes themselves, and take home their delicious creations for friends and family to enjoy.

Winter Warmer - Desserts

This ‘hands on’ course covers a variety of classic desserts from chocolate soufflé to pear tarte tatin, sticky date pudding, white chocolate parfait and more.

Follow Workplace Hygiene Procedures - THHGHS01B

This Level 1 course will cover current food legislation and hygiene requirements associated with food preparation, handling, storage, display and transportation. This course is designed to give you the accreditation needed for basic food handling. This is a nationally accredited unit. Follow Workplace Hygiene Procedures THHGHS01B is from Certificate I in Hospitality (Operations) THH11002.

Prepare and Serve Espresso Coffee - THHBFB12B

This unit deals with the skills and knowledge to extract and serve espresso coffee using a commercial espresso machine, including storage of coffee, cleaning, care and maintenance of machinery. It applies to baristas and others who make coffee using a commercial espresso machine in a variety of hospitality settings.

(This unit is assessed with the pre-requisite unit THHGHS01B Follow workplace hygiene procedures which must be successfully completed to obtain competency)

Coffee Making
This ‘hands on’ course will take you through all major coffee styles including:

  • caffe latte
  • macchiato (short and long)
  • short black (espresso)
  • long black
  • flat white
  • cappuccino
  • Vienna

Also covered in the course is the history of coffee, comparison of blends and production methods.

Chocolate Making

This is a hands on fun course where you will learn the techniques of tempering using pure Belgium couverture chocolate. The course will include a handout with the recipes, some information and history about chocolate and chocolate making. You will also be shown the art of making chocolates and creating your own masterpiece using the skills you have learnt. On completion, you will receive a certificate and be able to take home what you have made to enjoy with your friends and family.

Provide Responsible Gaming Services Refresher Course

Existing gaming industry employees who are working in the gaming machine area of an approved venue are required to undertake an accredited refresher course by 22 May 2008, and every period of three years thereafter.
