Santino Agrillo
Diploma of Hospitality Management (Operations)
Born in Sicily, Santino Agrillo had the passion from a young age to become a great Italian chef.
Leaving Italy in 2006 bound for Australia, Santino enrolled in a Diploma of Hospitality Management (Operations) at Carrick Institute of Education, Sydney Campus.
After successfully completing this course, Santino went on to complete the Certificate III in Hospitality (Commercial Cookery). Santino is now a part owner of ‘Sugo,’ an authentic Italian restaurant, located in the hub of Paddington’s shopping district.
“My experience in the workforce combined with the knowledge I gained from Carrick, in particular, communication skills, marketing techniques and restaurant management, gave me the essential elements needed for me to start my own restaurant,” he said.
Santino was inspired by his teacher who also owned a restaurant, and gave him the valuable knowledge of ‘real life’ experiences to be able to manage a business.
Santino’s main objective is to introduce the ultimate authentic Italian culinary experience to Sydney-siders.
Venkadesh Ramakrishnan - INDIA
Advanced Diploma of Hospitality Management (Commercial Cookery)
Venkadesh is quickly making a name for himself after securing a part-time job with Tiffins, an innovative online catering business responsible for introducing Melbournians to this hugely popular concept from India. Currently enrolled in the Advanced Diploma of Hospitality Management, he is mixing theory with practical experience while working as a kitchen assistant for Tiffins at the Docklands.
At Tiffins Venkadesh helps prepare authentic Indian curries, which are then delivered door-to-door on bike to busy professionals in Melbourne’s CBD. “Studying commercial cookery is a natural progression for me as I have a passion for food. Now I am working as a kitchen assistant. I help the chef prepare mis-en-place and cook Indian foods. I have a great job at Tiffins and an excellent boss who appreciates my work,” said Venkadesh.
Carrick Recruitment and Training Services (CRTS) assisted Venkadesh in preparing his resume to be able to apply for the position through the dedicated job placement service available to students.

My name is Daniela Bakrlikova and I have completed an Advanced Diploma of Business (Marketing).
I chose to study at Carrick Institute of Education because the educational program is very well structured and they offer a wide range of units that were necessary for my entry into the workforce. From day one I found the staff to be welcoming, helpful and very well organised. I made a lot of friends here, not only through my course but also through social programs organised by Carrick Institute of Education. When I came to Australia I was looking for an English course on the internet and in the Yellow Pages. When I found Carrick Institute of Education, Didi explained the course and I knew that this was the right one for me. My name is Dheeraj Sapkalee and I’m originally from Bombay (Mumbai) in India. I am an ex-student of Carrick Institute of Education where I completed my Advanced Diploma of Hospitality Management. It was a great experience for to me have studied here as it has given me many great opportunities. The teachers were great and their knowledge of the industry has stood by me ever since. I have been so fortunate to have made friends from all over the world - South America, Europe, Asia and many more places.
Through working in commercial kitchens I managed to get my TRA which is so important to me. I am now a permanent resident and still stay in contact with the Institute and former classmates through the recently formed Alumni Association which has invited me to talk to this year’s graduating students. Through Carrick Recruitment and Training Services I have managed to get a job as a chef in the famous Shangri La Hotel in Sydney. This has always been my goal - to work as a chef in a prestigious hotel.

My name’s April Truchan. I’m from Canada currently in my final stage of the Advanced Diploma in Hospitality Management. I reflect back at my time in Carrick as a time of great highs and lows. As Chairperson of the Student Representative Council my aim has been to develop a more cohesive environment for staff and students. I have personally gained great friends and more confidence in myself. The instructors and staff have always been able to point me in the right direction whether I was pursuing personal or educational goals. I have watched the Institute grow for the better and I’m excited to see where the future alumni association will take it! It is wonderful to see so many different cultures learn about one another and sharing a laugh. As for my future, I am looking forward to furthering my career here in Australia, filling the skilled chef shortage gap and eventually branching out into the educational sector of the industry.

I completed an advanced level of English at Carrick Institute of Education and after a two-week break I started studying the full-time IELTS Preparation course. I’m doing this course so I have the skills to register and start working as a nurse in Melbourne, as I have studied this Bachelor course in my home country.
